I’m head bartender at The Raines Law Room at The William Hotel located in Midtown. I started cocktail bartending in Philadelphia, where the late great Sasha Petraske was consulting at the Ranstead Room. Everything I know about cocktails I owe to him.
Where do you draw your cocktail inspiration from?
I always start from the classics then add new ingredients to make it a bit more modern. Going into places like Kalustyan’s, I always come out with multiple ideas, like maybe adding a different type of sugar or sweetener or a spice instead of the usual hot sauce, for example.
