.75 oz Brennivin (the original Iclandic spirit, Aquavit)
2 Dashes Fee Brothers grapefruit Bitters

Pour the spirits & bitters in a shaker, shake, pour into a 12 oz Mason Jar over fresh ice, Splash the club soda. Garnish: Fresh Basil Leaves
I was in a wine tasting when my wine rep pulled out this green Aquvit bottle and said taste this. It was the Brennivin Icelandic spirit. I was a week away from hosting a Bruichladdich 5 course dinner pairing with Brittini Rae and needed to come up with a Botanist gin welcome cocktail. As soon as I tasted Brennivin it all started to click. I knew the spirit, the gin and I had a good feeling the grapefruit bitters would work as well as the basil(I wanted to add an herbal cocktail to the cocktail menu). After playing around with different versions I decided the splash of soda on top was all it needed.
