In a mixing glass, stir all ingredients over ice; strain into a chilled cocktail glass. Flame orange peel over top of finished cocktail and discard the orange peel. I like to work with classic styles and proportions when it comes to cocktails. A few simple ingredients in the right amounts take a cocktail from a weekly special to something people will be making for a long time. Cognacs seem to be the last thing on people’s minds these days when it comes to cocktail creation but it can really play well with other ingredients without getting lost. It’s fun to take something classic like a Cognac and maraschino liqueur and mix it up with something a bit more trendy, like the applejack. Round it out with a bit of orange flavor and you have yourself a “Full House” of subtle flavors.
