On ice, shake Metaxa, verjus, and pine syrup; strain into ice filled Collins glass. Add sparkling wine to fill, and stir lightly. Sprinkle a pinch of sea salt onto the mousse and garnish with a sprig of rosemary. This drink pays homage to resinous Greek wine Retsina, whose mythology claimed the famed wine was flavored with the tears of wood nymphs.
