I was preparing to host an event at my home for friends and wanted to make something that would be wonderful and complex, without taking attention way from the food that was going to be served after the brief cocktail hour. I failed in that regard, as the cocktail was so visually appealing and enjoyable that we all skipped dinner and when right into after diner cocktails. What happens is that, when the drink is made properly, the temperature and density of the cocktail forces the amaro to the bottom of the glass. Visually you see a crystal clear cocktail at the top of the glass and a layer amaro on the bottom. Flavor, there is a crisp, botanical Martinez at first sip that will evolve as the amaro and cocktail integrate.
